To date, I have lost 20 pounds, and I started on
January 17, 2012! Anyway, onto the
reason for the post. I had some super
yummy dinners in the last few nights! I
made parmesan crusted pork chops and roasted veggies and cheesy hamburger broccoli
bake. Very different from each other,
but both were good.
Parmesan Crusted Pork Chops and Roasted Veggies
Need: boneless pork
chops, mayo, parmesan cheese (powdered in a can), veggies (whole mushrooms,
onion, zucchini, pepper), olive oil, garlic, and garlic salt.
Chops: coat the pork chops in mayo and then coat in the parmesan. Bake at 350 for 40 min.
Veggies: chop
veggies into bite sizes (leave mushrooms whole and onions in chunks), toss in
olive oil and garlic with garlic salt to taste.
Place on/in a stone dish/bar pan and bake at 350 for 45-50 min.
Next time I might add a little garlic salt to the parmesan
just to see, but it tasted yummy without it!
Cheesy Hamburger Broccoli Bake
This was a recipe from Linda’s Low carb (http://www.genaw.com/lowcarb/cheesy_hamburg_broccoli_cass.html)
that I changed up a very little bit. I
used fresh mushrooms and I doubled the recipe so that I could have
leftovers. It was really good! I had a friend over and made rice for her to
go with it and if I did that again, I’d make a little more sauce for her to
have that be a little more creamy for her.
It was plenty creamy for me (as I didn’t eat rice). Next time, I’ll salt and pepper the meat a
little more, it needed just a little dash of something more. I did, however, add garlic salt to it just
prior to baking, and I liked that.
Although I liked this recipe, it didn’t reheat all that
well. If I made it again, I’d only make
enough for one sitting.
Next up…Chicken Pizza (literally!)…
